Winemaking

"We use horizontal presses with a water-blown lateral membrane, its weight weighs gently on the harvest to gradually extract the juice.Our aim is to provoke alcoholic and malo-lactic fermentation, beneficial to the aromatic development of our wines. Since the beginning of the 2000s, some 50 Burgundian barrels of 228 litres have been added to our winery. They welcome in winemaking the juices of the plot "Les Belles Voyes" and also the reserve wines with which we develop our draw and disgorgement liqueurs."

HVE

The vineyard is moving towards the high environmental value certification (label awarded by the Ministry of Agriculture), the actions have been concentrated since 2011 around 4 axes:

  • The abandonment of weedkillers and insecticides (50% of the vineyard is ploughed and 25% is grassed)
  • The preservation of biodiversity (ancillary flora and fauna – natural predators)
  • The reconstruction of hedgerows to promote an ecosystem beneficial to the harmony of the vineyard
  • Permanent upgrades to buildings and facilities are used to separate wastewater and recover rainwater
  • Creation of the domain: 1900
  • Vine work: HVE abandonment of weedkillers and insecticides, agroforestation
