Established in Bouzy for 200 years, the Pierre Paillard estate is now managed by two brothers, Antoine and Quentin Paillard. They work a vineyard of 11 ha which is located in its entirety on the terroir of Bouzy.

Important work is carried out in the vineyards where insecticides and herbicides are banned. The soils are meticulously worked and an organic amendment (homemade compost) helps to develop microbial life, root growth and the assimilation of nutrients already present in the soil.

Particular attention is also paid to the choice of plant material, where they favor the replanting of mass selection from their old vines as well as Pinot Fin,traditionally planted in Burgundy. These vines offer us in return low yields,facilitating the picking of grapes at full maturity expressing their terroirs.

Their approach is not very interventionist in the cellar in order to express as naturally as possible the personality of their Pinot Noirs and Chardonnay grown on the clay-limestone soils of the Bouzy terroir. The fermentations are in native flora, the malolactic is never blocked and the doses of sulfur are minimal.

The wines are vinified by plot and aged for 11 months on lees in vats and barrels and then in cellars where they will age up to 10 years on lees for their finest vintages.
