"A winemaker responsible for his terroir."
Thibaud Brocard's vision: "My way of working with vines and wine is simple, I favour vintages with a long time on latte to obtain those roasted and brioche aromas that I like so much, with a single grape variety, coming from the same hillside.
There is a real passion for black whites, although I also produce whites of whites. Pinot noir, by its complexity, is a grape variety that intrigues me enormously.
Today, I consider myself a winemaker responsible for his terroir. On the vineyard, I apply ultra-reasoned management for each input.
For me, understanding and taking care of my vineyard means ensuring a large part of my job as a winemaker. »
The production of Champagnes Brocard Pierre is a blend of new and old methods designed to create wines of gastronomy, reflecting the House and the terroir of the Côte des Bar.
Its Kimméridgian clay-limestone basement brings longevity and character to our Pinot Noir, as well as minerality and vivacity to our Pinot Blanc and Chardonnay.
For Thibaud, shaping a wine means accompanying the necessary steps of winemaking and not bludgeoning the wine with products, which gobble up the expression of such a generous terroir.
"We have a traditional Vertical Coquard press that provides a soft and homogeneous press to avoid too much color extraction. We make all of our wines under stainless steel to respect the reflection of our terroirs. We work under nitrogen to minimize the addition of sulphur in our wines and thus offer you free and gourmet wines."
