Here are the values that were passed on to Tristan Hyest. Thanks to his father, he decided to learn the work of the vine and wine. He also inherited the requirement of champagne.
From his experience in different vineyards, he drew essential expertise to his installation in the early 80s. The investment of his parents and the desire to preserve this heritage pushed him to join the School of Viticulture.
It was therefore in 1999 that he decided to join the farm with the desire to train with his father and to acquire solid experience.
In 2001, he had the opportunity to personally take over vines and obtained replanting rights. Then in 2003, with a small farm of 2.5 ha, he decided to start making his own cuvées. Champagnes of creation that assume a style, a terroir .. his passion.
Tristan ages in vats, although the wood has just entered the cellar. Malolactic fermentations are carried out.
